Rice Congee

Makes 6 servings

Chinese rice porridge, also known as jook, is designed to provide a soothing start to your morning. It is served by itself or with a choice of flavorful mix-ins like carrot, green onion, shiitake mushrooms, unsalted peanuts, or fresh green soybeans.

10 cups water
1 cup medium-grain white rice, such as calrose
1/2 teaspoon salt, or to taste
3 fresh shiitake mushrooms, stemmed and diced
3 green onions, chopped
1 medium carrot, shredded
1 tablespoon minced ginger root

1. In a large saucepan, combine water, rice, and salt. Bring to a boil over medium-high heat, stirring once or twice. Reduce heat to medium-low and simmer, uncovered, until rice is very soft and falling apart, about 40 minutes.

2. Add mushrooms, green onions, carrot, and ginger to congee. Simmer gently for 1 minute. Ladle into bowls.
