Lemon Pudding Filo Cups

Makes 6 servings

Prepare one 4-ounce package lemon dairy-free pudding mix according to package directions, using 12 ounces firm silken tofu and 1/4 cup water. Divide pudding between 6 ready-made filo cups and top with blueberries or other fresh berries. Chill until ready to serve.
