Green Eggs 'n Ham Sandwich

No matter if they're in a house, with a mouse, in the rain, or on a train, even the most finicky of eaters will enjoy this egg salad sandwich inspired by a Dr. Seuss classic.

5 large eggs, hard-boiled and peeled
1/4 cup mayonnaise
1/3 cup Simple Pesto
1/4 teaspoon salt
1/8 teaspoon black pepper
8 slices white bread
8 slices Black Forest ham

Finely chop the eggs and place in a medium bowl.

Mix in the mayonnaise and 1 1/2 tablespoons of the Simple Pesto. Add the salt and pepper.

Spread each bread slice with 1 teaspoon of the Simple Pesto. Place a slice of ham on one of the bread slices. Top with 1/3 cup egg salad, another slice of ham, and another bread slice. Repeat 3 times. Makes 4 sandwiches.

Do Ahead:
Cook the eggs 1 to 2 days ahead of time; refrigerate until ready to use.
