Berry Parfait

Makes 4 servings

Prepare one 4-ounce package vanilla dairy-free pudding mix according to package directions, using 12 ounces firm silken tofu and 1/4 cup water. In each of four dessert cups, layer 2 tablespoons pudding, 1/4 cup blackberries, 2 tablespoons pudding, 1/4 cup raspberries, and 2 tablespoons pudding, for a total of 1 cup each blackberries and raspberries (fresh or thawed). Garnish each serving with one blackberry and one raspberry. Chill until ready to serve.
