Recipe compliments of JeanPatterson.com, home of Cooking Outside the Pizza Box Tropical Ambrosia Makes 6 servings Drain 1 9-ounce can pineapple chunks and 1 11-ounce can mandarin orange slices, reserving juice. Blend 12 ounces firm silken tofu with 2 tablespoons orange curacao and 2 tablespoons reserved juice until smooth. Add one 4-ounce package vanilla dairy-free pudding mix and blend well. In a large bowl, mix pudding with pineapple, oranges, 3 tablespoons sweetened flaked coconut, 2 bananas, sliced, and 1 cup mango cubes. Chill until ready to serve. Garnish with toasted coconut. VEGAN
